Mediterranean Chickpeas Salad

Serves 2-4

Ingredients:

  • 2 cans chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • Salt and pepper

Instructions:

  1. In a large bowl, combine the chickpeas, cherry tomatoes, red onion, and feta cheese.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  3. Drizzle the dressing over the salad and toss well to combine.
  4. Add the chopped parsley and mint and toss again.
  5. Serve immediately or store in the fridge for later.
